Lamb on the bone with a green chili cardamom sauce


250 gm Lamb on the bone - marinated

1 medium onion - paste

3 tsp heaped grated ginger

1 medium serrano chili - de-seeded and chopped

2 ea cloves

5 ea cardamom (green)

2" pc of cinnamon

1/4 tsp nutmeg powder

1 tsp cumin seeds - roasted and powdered

1/2 tsp garam masala pwd

salt to taste

4 tbsp oil


Heat oil in a kadhai.

Add whole spices (cloves, cinnamon, cardamom)

When crackled, add onion ginger paste.

Saute for a few minutes till the paste is drying out.

Add teh powdered spices. Saute till oil begins to ooze out of the paste.

Add a cup of water. Saute till the sauce starts drying out and oil oozes out.

Add salt, marinated lamb leg / shank or large pcs of lamb.

Saute to sear the meat for a few minutes and add 2 cups of water.

Simmer covered till teh meat is tender.

Enjoy with rice or naan or other Indian bread.
